Hong Kong: Hotel Restaurant in TST to Serve French Free Range Chicken Dishes in July

A fine dining restaurant in Kowloon will serve seasonal French chicken dishes in July 2014 using free range French chickens, which are protected under French law with Appellation d’Origine Contrôlée (AOC) status.

Hugo's at the Hyatt Regency in Kowloon's Tsim Sha Tsui district will serve 4 seasonal French chicken dishes during the month of July.

The dishes will be prepared using free range chicken from the Bresse region of Eastern France.

The dishes will include:

  • Bresse spring chicken vol-au-vent – deboned chicken that is sautéed and cooked in rich black truffle cream sauce.
  • Salt crust baked half AOC Bresse chicken with black truffle – a classic preparation with slices of fresh black truffle placed under the chicken’s skin.
  • Roasted AOC Bresse chicken breast with foie gras – the chicken breast is roasted on the bone with banana fondants.
  • Roasted whole AOC Bresse chicken with morel cream sauce – enough for 2 persons.

The hotel has direct access to the Tsim Sha Tsui and Tsim Sha Tsui East MTR stations. It is a short taxi ride from Canton Road, the Hung Hom MTR station, Kowloon West, Mongkok, the Star Ferry, and other spots on the Kowloon Peninsula.
