Sichuanese Cuisine is one of the Eight Great Cuisines of China. Chef Andy Gao from The Ritz-Carlton, Chengdu, in China's Sichuan province will serve as Guest Chef at Café 103 at The Ritz-Carlton, Hong Kong, from 10 to 19 April 2015.

Sichuanese Cuisine is NOT for the faint of heart. If many Sichuanese dishes are heavily spiced, they are NOT spicy in the traditional sense. Rather than burning your tastebuds, ma la spices actually NUMB your tastebuds.

Ma la is a unique taste sensation that defies easy description. If you haven't tried it you couldn't possibly imagine what it tastes like. And it is NOT for everyone.

Take me, for example. I LOVE spicy food, but I am not a big fan of ma la. I can appreciate it in small doces, but in my experience, many Sichuanese chefs have such a heavy hand with ma la that it overpowers everything else.
