Le French May
A Parisian style bistro with views of Victoria Harbour celebrates Le French May with dishes inspired by the hearty peasant fare of the Midi-Pyrénées region of Southwestern France.
In celebration of Le French May, the French Window Brasserie and Bar on Hong Kong Island will serve dishes inspired by the robust peasant fare of the rural France.
Matthieu Bonnier, Executive Chef at the French Window Brasserie and Bar, will serve mouth-watering dishes inspired by the earthy peasant dishes popular in the Midi-Pyrénées region of Southwestern France.
There are many farms in the mostly rural region, and local produce is usually used in the preparation of its dishes. Its cuisine is both robust and refined.
Because the region borders Spain, there are both French and Spanish influences in its style of cooking.
Chicken, duck, and goose are featured ingredients. Foie gras, black truffles, and Roquefort cheese are often used.
One to the most popular dishes in the Midi-Pyrénées is cassoulet, a hearty stew made with gratinated white beans with duck leg confit, cured sausage, and pork belly.
The stew takes hours to prepare. When ready, it is covered with a crusty gratin and served piping hot. Now if that doesn't get your mouth watering, I don't know what will!
