Foody Friday: In Search of the Best Chinese Restaurant in Singapore

There are many Chinese restaurants in Singapore, but is there a best Chinese restaurant in Singapore? And what restaurant serves the best dim sum in Singapore? My search begins at a Chinese eatery named Yan Ting.

Yan Ting is one of the best Chinese restaurants in Singapore, and it serves some of the best dim sum in Singapore. It is one of six food and beverage outlets at the St Regis Singapore, a five star hotel.

Before checking out of the St Regis Singapore, I have lunch at Yan Ting, reputedly one of the top restaurants in Singapore.

Open for lunch and dinner, the fine dining Chinese restaurant has both a la carte menus and set menus.

The menu focuses on Cantonese Cuisine, which is one of the Eight Great Cuisines of China.

Featured dishes on the menu include Peking Duck Wrapped with Trio-Colour Pancake, Crispy Suckling Pig, and Braised Whole Abalone in Superior Oyster Sauce with Seasonal Greens.

Xavier Boey, Digital Marketing Executive, St Regis Singapore, is my dining companion at Yan Ting. Instead of ordering a la carte, we opt for the Lavish Set Menu, which features some of Chef Tony Wun’s signature dishes.

Chef Tony has had more than 30 years’ experience in front of a wok.

  • Trio of Appetizers – Yan Ting Roasted Chicken with Garlic, Deep-fried Prawn Coated with Salted Egg Yolk, Marinated Jellyfish with Scallion Oil. 
  • Sea Whelk ConsommeDouble-boiled Sea Whelk Consomme with Black Garlic Served in Teapot. 
  • Sea Perch FilletOven Baked Sea Perch Fillet with Miso.
  • Kuobuta Pork – Pan-fired Kurobuta Pork with Black Pepper Sauce. 
  • Fried Rice – Lobster Wok Fried Rice with Homemade XO Sauce. 
  • Almond TeaFragrant Homemade Almost Tea with Egg White Served with Crispy Red Bean and Banana Fritter. 

This is a very enjoyable meal, well paced, with a nice array of flavours, textures, and presentations.

Not only is the food delicious, I also enjoy hearing Xavier’s exploits about bungee jumping in Las Vegas and staying as an Air BNB guest at a private apartment in Hong Kong.

Is it good value for money? Xavier seems to think so, and he says his hostess served a really yummy Cantonese style congee for breakfast.

I like most of the dishes we are served, and two of them really stand out.

The Double-boiled Sea Whelk Consomme with Black Garlic Served in a Teapot and the Lobster Work-fried Rice with Homemade XO Sauce are beautifully presented in addition to being mouthwateringly delicious.

I’m not a big fan of jellyfish so I give my portion to Xavier. The only other dish that doesn’t send me is the Pan-fried Kurobuta Pork with Black Pepper Sauce.

I find the meat a bit over-tenderized, but I know that many Chinese diners like their meat prepared this way.

The dining room has a contemporary feel with subtle touches of chinoiserie. There are two semi private dining rooms seating eight  to 20 diners.
