Sands Restaurant is a casual all-day dining restaurant at The Discovery Shores Boracay Island in the Philippines. It serves buffets at breakfast and Philippine and global dishes at lunch, and dinner.
Overlooking White Beach, the Sands Restaurant at the Discovery Shores Boracay Island is open for breakfast, lunch, and dinner.
Both international and Filipino fare is featured at lunch and dinner. International fare runs from appetizers, fresh oysters, and vegetable dishes to noodles, all kinds of seafood, and pork and chicken dishes served with rice.
The Filipino dishes are the eatery’s star attraction. I asked Food and Beverage Supervisor Philip Bolano to suggest some dishes for diners not familiar with Filipino cuisine. He suggested …
- Chicken Inosal – traditional grilled chicken marinated in soy sauce, calomasi (similar to limes, but smaller and less acidic), ginger, and annatto oil, a condiment made from the seeds of the achiote plant.
- Bacolod Kansi – beef soup, a little bit sour, with a large bone with bone marrow.
- Adobo Fried Rice – the national dish of the Philippines, adobo fried rice is usually made with flakes of either chicken or pork, which has been marinated in soy sauce and vinegar.
Filipino adobo should not be confused with the adobo of Spain, Mexico, or other Spanish speaking countries – even though the name came from the Spanish explorers that discovered the Philippines in the late 16th century.
In the Philippines, Adobo refers to a cooking process indigenous to the Philippine Archipelago. When the Spanish first explored the islands, they encountered a cooking process that involved stewing with vinegar.
While vinegar is used in the marinade of Spanish adobo, the other ingredients – such as soy sauce – are actually quite different to the ingredients used in Filipino adobo.
Buffets are served at breakfast, and they are included in the price of rooms of all guests staying at the hotel.
Standard fare such as fruit, salads, hash brown potatoes, soft and crispy bacon, breads and pastries, waffles and pancakes, and eggs cooked to order are served every day.
In addition to these typical breakfast items, however, there are always two vegetarian options, four international dishes, and five Asian dishes, which change daily.
