Cathay Pacific Serves Spanish Cuisine on New Hong Kong – Madrid Route

Airlines and Aviation

Cathay Pacific Airways has launched daily non-stop service between Hong Kong and Madrid, Spain. To celebrate, the airline will serve Business Class passengers authentic Spanish dishes.

Madrid, Spain, is the latest travel destination on Cathay Pacific Airways’ growing route network.

The airline flies to nearly 200 travel destinations in Asia, the Americas, Europe, and Africa. The airline also flies to the Spanish city of Barcelona.

The Hong Kong-based airline asked Spanish native Pedro Samper, Executive Chef at The Langham, Hong Kong, to create a menu of authentic Spanish dishes, which will be served to Business Class passengers until 31 August 2016.

“As a Spanish native, I’m thrilled to partner with Cathay Pacific and promote not only the new route to Madrid, but the country’s cuisine as well,” Pedro says.

“There are many regional cooking styles throughout Spain, all packed with flavour and character, and it’s exciting to help cultivate an authentic dining experience for our guests in the air.”

Inflight Dining

Owing to altitude, pressurization, and low humidity levels, food tastes differently in flight than it does on the ground – one of the key reasons why passengers often complain about the quality of food served on airplanes.

While the menu was inspired by traditional Spanish recipes, the airline’s catering team carefully selected ingredients that would be suitable to being served aboard aircraft flying at high altitudes.

One off the dishes was inspired by a recipe originating in Pedro’s hometown, San Sebastian, Spain: braised Basque-style cod fish with clams in a salsa verde sauce. It is often served during festivals and at celebratory occasions.

“From tasty tapas to classic soups, salads to main course, Spanish cuisine is well-known for having a beautiful blend of cultures, history and climates from different European regions,” says Cathay Pacific Head of Catering Aaron Claxton.

“We are delighted to collaborate with The Langham, Hong Kong, to offer our passengers an array of exciting Spanish delicacies. In fact, this is the first time we are serving local Spanish dishes on board, which I believe will provide our passengers a great opportunity to savour the real tastes of Spain on their voyage to the exciting city of Madrid.”
