On my first night in Singapore, I dine at LaBrezza, a stylish Italian restaurant at the St Regis. Should we sample the pasta or the pizza? What about the five or seven course degustation menus? Or should we order a la carte?
LaBrezza is an informal Italian restaurant at the St Regis Singapore. It is one of six food and beverage outlets at the hotel.
For dinner on my first night in Singapore, I dined at LaBrezza, a stylish yet informal Italian eatery with an open kitchen and impeccable service.
Diners can order a la carte. Other options include a business lunch menu, a barbecue night menu, a weekend prosecco brunch menu, and five and seven course degustation menus.
Open for lunch and dinner, the restaurant has both indoor and outdoor seating, with the tables outside overlooking the swimming pool.
The restaurant’s a la carte menu runs from cold platters, antipasti, and salads to pasta, pizza, grilled meats, and seafood. Plus, of course, mouth-watering desserts.
My dining companion for the evening was Zachery Wickeremasuriya, a Marketing and Communications Executive at the hotel.
Zachery and I ordered a la carte, sharing most of the courses. Here’s a quick look at what we consumed, with my comments.
Starters

Our server brings the first course, Baccala in Due Maniere, oven-stewed cod fish with braised onions and milk reduction, pan-seared cod fillet with organic polenta and charcoal radicchio
- A great start to an enjoyable evening!
Ravioli del Plin

Our server grates Parmesan cheese over Zachary’s serving of Ravioli del Plin, which is traditional Piemontese agnolotti filled with chicken, pork, and tender veal and served with natural braising sauce.
- I’ve always loved ravioli, but I’ve always had them with tomato sauce. This is the first time I’ve had them with a white sauce, and they were sublime. This is my hands down favourite course of the evening.
Zuppa di Porcini e Pollo

Here I am with Zuppa di Porcini e Pollo, or porcini mushrooms veloute, slow-roasted chicken breast, mushrooms espuma, and hazelnut powder.
- OMG! What an interesting way to serve soup! I know it looks like iced coffee, and it is both creamy and frothy, but it is definitely savoury raather than sweet. And that touch of hazelnut gives it an unexpected nuance.
Insalada di Mare

The Insalada di Mare, made with prawns, octopus, scallops, mussels, clams, and calamari salad with zucchini, baby carrots, and asparagus tips, lemon zest, capers, and oregano salmoriglio is presented like an edible work of art.
- I’m not a big fan of octopus, mussels, clams, or calamari – so Zachary gets to feast on them while I devour a portion made with only prawns and scallops, and are they ever delicious!
Costoletta di Vitello

The Chef’s Signature dish, Costoletta di Vitello is a breaded veal chop with buttered kipfler potatoes with rosemary and garlic and served with arugula leaves, cherry tomatoes, and shaved parmigiana reggiano.
- I can see why the Chef is proud of this one! The breaded veal chop looks dry in the picture, but it is anything but – it is actually quite moist and succulent. And I especially I love those diced potatoes!
Dessert
I am tempted by the tiramisu, I’ve heard it is decadent, but I order the Sicilian Cassata instead.
- Ricotta cheese and candied fruit terrine with citrus coulis and pistachio gelato, it serves as the perfect end to a perfect meal.
One of the down sides of traveling alone is having to dine alone, especially when you’re being hosted at a five star hotel such as The Ritz Carlton Singapore.
It’s one thing to go to McDonald’s or a noodle shop by yourself. But it quite another to sit through a multi-course meal all by yourself.
The hotel’s Marketing and Communications Department went out of its way to keep me from getting lonely.
At each one of my three hosted meals, I was accompanied by a different member of staff, and I’m not sure which I enjoyed more: the yummy food or the stimulating conversation.
