Five Elements

The Chinese Five Elements consist of wood, fire, earth, metal, and water. And they are believed to be the fundamental elements of everything in the universe.
Most importantly, the Chinese Five Elements explain the relationship between things.
For example, they are used in feng shui, astrology, music, martial arts, and military strategy.
In fact, the Five Chinese Elements are even used in Traditional Chinese Medicine (TCM)! But does that extend to cuisine?
Jayson Tang, Executive Chinese Chef at JW Marriott Hotel Hong Kong, has created a five elements menu based on TCM. And he believes it will promote harmony in the body, mind, and spirit.
Each one of the five elements has a corresponding colour of food. Likewise, each colour of food has a corresponding internal organ.
- Wood – Green – Liver
- Fire – Red – Heart
- Earth – Yellow – Spleen
- Metal – White – Lungs
- Water – Black – Kidneys
The consumption of dishes made from these ingredients is thought to promote the health of the corresponding organ.
Thus, foods that a green are thought to promote the health of the liver.
Chinese Five Elements Dinner Menu
Mam Ho Chinese Restaurant at the JW Marriott Hotel on Hong Kong Island serves a mouth-watering Chinese Five Elements Dinner.
Based on Traditional Chinese Medicine (TCM), the menu is designed to promote the health of the liver, heart, spleen, lungs, and kidneys.
Appetizers
First, start your Chinese Five Elements Dinner with five appetizers. And each appetizer represents a different element and a different colour. Therefore, it will promote the health of a different organ!
Green Foods

First, go with green foods (wood), which TCM practitioners believe help remove toxins from the liver. This green power juice comprises apple, celery, green pepper, and cucumber. In addition, it has chilled bamboo pith stuffed with seaweed.
Yellow Foods

Second, try the poached egg with chanterelle mushroom. This appetizer represents yellow foods (earth) to strengthen the spleen.
Black
Third, try the chilled chicken with Chinese wine, which is a black food (water) to replenish your kidneys.
Red Foods

Next, protect our heart with the chilled tomato with crab meat and cucumber, which is a red food (fire).
White Foods
Finally, try the marinated osmanthus with fresh yam purée, a white food (metal) to repair the lungs.
Main Courses
The main course also comprises five dishes. Like the appetizers, each one is designed to generate energy and nourish one of your internal organs.
Red Foods

Because the heart is important to circulate blood and nutrients, warm it up with the double-boiled conch soup and red ginseng with Kanto sea cucumber filled with red foods (fire).
Yellow Foods

Next, strengthen the spleen for a better digestive system with the pan-fried amadai fillet with sweet corn sauce, representing yellow foods (earth), .
White Foods

As respiratory organs, the lungs need white foods (metal). Therefore, you can promote healthy lungs with pan-fried fish maw with almond consommé.
Black Foods


Because black foods (water) nourish the kidneys and enhance the immune system, end your meal with two dishes to promote their well-being. First there is deep-fried pigeon leg and pan-fried shredded pigeon. Second, there is braised brown rice with abalone.
Dessert
If you noticed that there were no green dishes among the main courses, that was not an omission. That was beause the chefs were saving the best for last!
The chilled avocado and green apple jelly with premium bird’s nest packs green foods (wood) rich in in natural remedies and dietary fibre.
The Five Elements Chinese dinner requires at least eight persons. And you must make reservations at least three days in advance.
